Different recipes require different types of sugar syrups. Like Rasgullas require thin syrup, gulab jamuns, and jalebis require medium thickness while barfi requires slightly thick syrup for them to set the flour/nut mixture.
Here we are discussing the one used in making barfi/fudge –
Sugar syrup for making barfi –
- Take 1 cup sugar in a pan and add ½ cup water to it.
- Boil this mixture until it comes to 2 string consistency.
- When you place the mixture between your index finger and the thumb, they stick and result in 2 strings.
- The other way to check this is to drop a little mixture in cold water and it forms a ball.
